Gesha has taken hold in San Agustin over the past six years, with many growers chasing its reputation and prices. But it's a gamble- trees take three years to fruit, and great quality isn't guaranteed by lineage alone. Angel knows this firsthand. Rather than fight it, he processed his Gesha with added fruit to coax out the sweetness and complexity the variety promises. It's a smart solution to a challenge many producers quietly share.

Cherries are picked every 21 days when they reach peak ripeness . The coffee is depulped into tiled tanks the same day and water is added to cover the mass. Five kilograms of chopped pineapple are added for every 250 kilograms of parchment. The mass is stirred every 12 hours, until the 72 hour mark when it is washed three times and then moved to the solar dryer to dry for between 18 -22 days. Coffees are stored in parchment in Grainpro until ready to be milled.
