From a 12-year-old coffee worker to a processing innovator, Andres created this ‘purple honey natural’ process with the goal of diversifying methods and providing a unique sensory experience. First, a 96-hour fermentation process is started in closed tanks with water and ‘sugar cane honey’ added to achieve a 15% sweetness level, then the coffee is dried in mechanical driers to ensure the right moisture content and end the fermentation process. Villa Lucia, Andres’ Farm, has evolved from a farm to a processing facility, where he buys cherries from his neighbors and designs fermentation protocols and processes to ensure his quality.
