Kathima factory operates under the Thambana Farmers Cooperative Society on the eastern slopes of Mount Kenya, where ~2,200 smallholders farm at 1,800m in volcanic soils. Key varietals are hand-harvested across two annual seasons and fully washed — sorted, fermented, soaked, and dried on raised beds. The process yields what this region does best: clean, bright, and structurally layered cups with distinctive fruit character.

Cherries are carefully sorted before pulping, then fermented to remove mucilage under controlled conditions. After fermentation, the parchment is thoroughly washed and, in many cases, soaked in clean water—a step that can further enhance cup clarity and brightness. Drying takes place on raised beds, where the coffee is regularly turned and protected from excessive heat and moisture to ensure even and stable drying.
