Sochiapam is one of Oaxaca's largest coffee-growing municipalities, tucked into some of the region's highest elevations. The area is heavily forested, home to a protected natural reserve its producers actively maintain. For years the focus here was volume over quality, but that's changed. With training on selective harvesting, fermentation, and drying, younger producers flipped the script, and the results speak for themselves.
